Vinification: Gently pressed non-destemmed grapes. Cold primary fermentation, followed by maturation on fine lees in stainless steel tanks. Bottled in sparkling wine bottles, where secondary fermentation took place (classical method), so the wine becomes sparkly. The second fermentation is followed by a five-year maturation on fine lees in the bottle.
Preparation: Carefully supervised the selection of grapes on the grapevines and of the course of ripening. Sugar and acid parameters in the grape berry are measured weekly so that the grapes are what make the wine. Hand-picking takes place in the middle of September.
