Location: Belski Vrh, vineyard location Zeletina, southern location, sunlit throughout the day. At an altitude of 360m above sea level, nicely winded and sunny. Because of the 65% average incline, the grapevines receive more intense sun rays, which allows the grapes a greater maturity. The parent material of the soil is sandstone.

Average grapevine age: 38 years

Vinification: cold-pressed, the pressing process is longer because of dried grape berries and takes ca. 8 hours. Fermentation with dry berry selection happens at ca. 20 °C, which means the wine cellar is too cold. The fermentation is very slow because of naturally present sugars and takes about two months. As a result of increased sugar content, 223 g/L, and high acids the wine will continue to gain quality and taste in the bottle.

Preparation: Carefully supervised the selection of grapes on the grapevines and of the course of ripening. Sugar and acid parameters in the grape berry are measured weekly so that the grapes are what makes the wine. Hand-picking takes place in December when the berries are appropriately enriched with gray mold (Botrytis cinerea).

Wine characteristics: Our Sauvignon, produced from carefully chosen, on the grapevine dried grape berries, smells and tastes of honey and dried fruits, which is typical for high Sauvignon predicates. High acids are well enriched with sugar, which gives the wine harmony. The wine has an oily or syrupy texture. We could say it resembles liqueur, but considering the technological procedure the entire aroma and sweetness come from the grape berry.
